Create authentic Ohio-style trail bologna at home with LEM® Backwoods® Trail Bologna Cured Sausage Seasoning. This zesty, peppery blend offers classic old-fashioned flavor that pairs perfectly with both wild game and domestic meats. Each package includes a pre-measured cure to ensure proper curing and consistent results in every batch.
To prepare, grind meat containing at least 20% pork or pork fat, dissolve the seasoning in water, and mix thoroughly. Form into logs or stuff into soaked fibrous casings. Bake at 300°F until the internal temperature reaches 165°F. If using casings, refrigerate overnight before cooking or smoking at 180°F until fully cooked. Cool and refrigerate to maintain freshness. Ingredients do not contain gluten.
