Turn your favorite meats into bold, crave-worthy snack sticks with LEM® Backwoods® Pepper Snack Stick Seasoning. This perfectly balanced blend of spices delivers a classic peppery kick that adds just the right amount of heat to cured snack sticks. Ideal for wild game or domestic meats, this seasoning provides consistent flavor and includes a pre-measured cure to ensure proper curing, color, and taste every time.
To prepare, grind a meat mixture containing at least 20% pork or pork fat. Dissolve the seasoning in water and mix thoroughly with the meat until evenly blended. For use with a Jerky Cannon, shoot the mixture onto a cookie sheet. Bake in a preheated 200°F oven until the internal temperature reaches 165°F. Alternatively, stuff into natural sheep casings or 17–21mm collagen casings, then smoke or bake at 180°F until the internal temperature reaches 165°F.
