Create classic, mild-flavored bologna at home with LEM® Backwoods® Bologna Cured Sausage Seasoning. This kid-friendly favorite features a smooth, traditional flavor profile that’s perfect for bologna-style sausages made from wild game or domestic meats. Expertly blended spices deliver consistent results, while the included pre-measured cure helps ensure proper curing, color, and flavor development every time.
To prepare, grind a meat mixture containing at least 20% pork or pork fat. Dissolve seasoning in water and mix thoroughly with meat until evenly blended. Stuff into rounds, fibrous, or non-edible collagen casings (soak casings in warm water before stuffing). Cook in a preheated 180°F oven or smoke in a smoker until the internal temperature reaches 165°F. Refrigerate finished sausage to maintain freshness and quality.
